Appearance

Before tasting, take a moment to observe the cider. Observe the sunlight bouncing through your glass. Is it a light straw color or a deep rich golden? Look at the bubbles: are they large balloons bursting to the surface? Or tiny, gently rising, bubbles? Lightly swirl and notice how the cider clings to the side of your glass.

Aroma

Pause and consider the aroma. Gently swirl and smell across the opening of your glass. In addition to apples, can you detect different scents? Perhaps you can find a subtle bouquet of flowers, pine, citrus, or peaches.

Taste

And finally, taste. Notice the subtitles of flavor; the balance of acid and sweetness. Is the cider bright and tart, or mellow and rounded with age? How many flavors can you taste? Observe the texture. How does the cider feel in your mouth? Move through the process slowly, and enjoy the full experience of the apple.

True Apple FlavorTHE DRY SEASON

This cider is inspired by the rugged character of the Southwest. A slow, cold fermentation preserves the fruit-forward character. Maturation develops balance, complexity, and a delicate rustic charisma. Created and bottled by hand from heritage apples. Nearly dry, tart, bright, and crisp. Pairs well with good friends.

Dry and FruityTHE HOPPY STOIC

Homegrown hops from the farm! These Cascade and Chinook hops were grown along the edge of the pasture and blended with cider made from apples picked in Mancos, Colorado. You could call The Hoppy Stoic an ‘India Pale Cider.’ This cider has been dry-hopped, so it retains only the floral components of the hops and none of the traditional bitterness. Floral, pine, citrus, stone fruit, and yumminess.

Cider with Wine GrapesSTOIC JAVELINA ROSÉ

Local heritage apples blended with wine from grapes we harvested in Montezuma Canyon, Utah. This blend of carbonated apple and grape wines is delicate and balanced (like a Javelina) and a perfect complement to a sunny patio (unlike a Javelina). Raspberry colored and lightly sweet, this fruity rosé pairs well with a stubborn personality and a thick skull.

Over the past 200 years, settlers have planted thousands of unique apple varieties. Industrial farming has winnowed apple diversity to a mere shadow of its full potential. Our new R.A.D. Project celebrates the rich diversity of Malus domestica an it’s wild relatives. We are seeking and planting hundreds of unique apple cultivars to revitalize and restore our valuable apple heritage. This limited cider release honors the wild character of the apple. We are committing 10% of the proceeds from this cider to the preservation of apple diversity.

Crab apples handpicked from a single tree in Skull Valley, Arizona form the backbone of this small-batch cider. We picked countless buckets of these small marble-sized fruits just for you. Located in a nearby verdant valley, this ancient tree shades an old chicken coop, with years of colorful history etched into the tree’s weathered wood. This limited release of 34 cases is a unique tribute to the region’s rich history and character.
